Is there a way to change the order of the Show Topics. By default, only items posted within the last month are visible. I would like this changed to All. Better yet, I'd like to change it to all and hide that item.

You can set that Setting under Admin -> Settings -> Board Settings -> "Show Topic Default" There you can set the default Settings for all Forums.
